Herbed Brown Rice Pilaf

rice pilafHere is a quick, easy and healthy side dish that goes well with your favorite chicken, seafood or lean beef/pork entrée.  It also would be tasty with a green vegetable or a salad.

 

Ingredients:

1-tablespoon butter or olive oil

1 shallot, chopped

1 cup long-grain brown rice

Kosher salt and freshly ground pepper

2 1/2 cups low-sodium chicken broth or water, warmed

1 clove garlic, smashed

2 sprigs fresh thyme

3 tablespoons chopped fresh flat-leaf parsley (or 1 tablespoon dried parsley)

 

 

Directions:

 

Melt the butter or warm the olive oil in a 2-quart saucepan over medium heat. Add the shallot and sauté until tender. Add the rice and stir until the rice is glossy and coated with the butter or olive oil.  Season with salt and pepper.

 

Add the stock, garlic and thyme. Cover with a tight fitting lid. Cook 40 minutes turn off the heat and let sit for 10 minutes.

 

Remove the thyme sprigs and garlic. Fluff with a fork and add parsley and green onions.
